For a warming breakfast treat in the winter try my cooked apples. The chia seeds offers protein and ghee provides warmth and grounding.
- 1 apple chopped
- 1 pear chopped
- ½ inch piece of ginger minced (can substitute 1/8 tsp dried ground ginger)
- enough water to cover apples and pears
- ½ tsp breakfast spice mix (or add 1/8 tsp each cinnamon, allspice, cardamom and a dash of cloves)
- 2 TBSP raisins
- 4 pitted prunes cut into quarters
- 4 dried apricots cut into quarters
- 2 TBSP dried cranberries or cherries
- 2 tsp ghee
- Maple syrup to taste
Yields 2 servings.
Cook the apples, pears, ginger, spices, ghee and dried fruit in the water over medium low heat for 10-15 minutes.
Add maple syrup to taste. Enjoy!
