For a delicious and warming treat without the strong taste of garlic or for dosha-balancing, I make this guacamole with ginger.  Ginger helps to settle the stomach and warm the blood.

  • 1 ripe avocado
  • 2 tsp fresh ginger minced or paste
  • 2 -3 green onions sliced
  • ¼ tsp ground cumin
  • ¼ tsp ground coriander
  • ¼ tsp freshly ground black pepper
  • 1/8 cup lemon and lime juice 50/50 mixed (more to taste)
  • ¼ to ½ cup fresh cilantro minced
  • salt to taste

*chopped tomatoes or pomegranate seeds (if in season) *

Place avocado, ginger, onions, cumin, pepper, coriander and lemon juice together in a bowl and mash with a fork.  Add more lemon juice if desired.  Stir in cilantro and tomato or pomegranate.  Taste and add salt to desired consistency.  Dip with vegetables, spread on rice cakes, or serve with beans and rice.  Enjoy!

*Ayurvedic adjustments:

Vata (people who have difficulty sitting still,  maintaining body weight, or often feel cold)  – use sun-dried tomatoes instead of pomegranate seeds or fresh tomatoes and use lime juice only

Pitta (people who have a reddish skin complexion or often get gastric reflux symptoms)  – use equal parts lemon and lime juice and hold back on adding tomatoes and pomegranate seeds

Kapha (people who are overweight or have diabetes or pre-diabetic conditions) – use lemon/lime combo and add pomegranate seeds
